Vegetarian Mexican Tacos

Vegetarian tacos are filling, healthy, and extraordinarily delicious. You can use a blend of grilled or sauteed veggies, or stick with traditional rice and beans. You can opt to go for intense heat, or mild and delicate flavor. Here is a guide that will show you how to make a vegetarian taco.


A very famous Mexican dish, topped with cheddar cheese and sour cream. The crispy fried corn tortilla is filled with layers of hot baked beans, cut lettuce, chopped tomatoes and grated cheddar cheese. This can make a sumptuous and healthy dinner for a family.


Makes: 10 tacos


Preparation Time: 20 minutes


Ingredients


10 hard corn taco


½ Cup sliced onion


1 cup finely shredded iceberg lettuce


Sliced red bell pepper


½ cup sliced green bell pepper


½ cup finely shredded cabbage


½ cup sliced tomatoes


Vegetarian Mexican Tacos

½ teaspoon red chili powder


½ cup chopped parsley or coriander leaves


½  canned baked beans


Sour cream


Grated cheddar cheese


Salt, black pepper and cumin powder to taste


Method


Prepare the Taco’s as per the instructions.


Mix together the salad ingredients - onions, lettuce, bell peppers, cabbage, tomatoes, chili powder, salt, pepper, cumin powder, parsley and set aside. Warm the canned baked beans in the microwave or on stove top.


Serving the Taco’s


Place a layer of warm baked beans in each taco shell.


Then top with a layer of salad ingredients in each shell.


Finally put a blob of sour cream and sprinkle with cheese on the tacos. Serve immediately.
